Just in time for the 4th comes a wonderful piece from Paul Lukas, of "Beer Frame" fame, on the wonderful regional varieties of American hot dogs.

It's a good thing I went to lunch today at a great new Chicago dog place nearby before reading this piece. Chicago Tasty Dogs even has the "disarmingly bright emerald relish" that Lukas mentions. I haven't found any place that makes dogs the way I make them at home: steamed in beer, served on a nice, big bun, topped with yellow mustard, deli mustard, ketchup (yes!), sauerkraut, celery salt and American cheese. Mmmmmmm.
